History
Podere La Paolina Today
Podere La Paolina is an active 22-hectare farm, where crops change every year: from sunflowers to winter wheat, from barley to alfalfa for grazing livestock fed on grass. We produce our own extra virgin olive oil from selected varieties, and offer locally sourced products such as Sangiovese wine, honey, cereals, legumes, and our cantucci, traditional almond biscuits traditionally enjoyed with Vin Santo.
Our farmhouse and restaurant are dedicated to traditional Tuscan cuisine, using local ingredients with menus that change seasonally to highlight freshness and authentic flavors of the territory.
We are a family passionate about rural life, actively involved in daily activities, and eager to share with our guests the knowledge of the territory and the Tuscan lifestyle. Ines manages the farm and leads guided tours, James is our chef transforming local ingredients into traditional and creative dishes, Fabrizio handles marketing and social media, and Nicolas is our bartender, ready to craft memorable experiences.
